Specialized home chefs - an asset for any institution

Home chefs specialize in cooking in retirement and nursing homes, institutions for people with special needs or other similar facilities. They have several years of professional experience and are characterized by extensive organizational skills and leadership qualities. The expectations and requirements of kitchen staff in residential kitchens have changed considerably over the last few decades. The wishes, preferences and needs of care home residents should always be recognized and ideally implemented. They are therefore also an important interdisciplinary point of contact when it comes to nutritional issues, eating habits and quality of life. Communication is therefore a key issue for home chefs. They take on the planning and implementation of individual kitchen projects and guide the kitchen staff. They create concepts for catering, food types and diets, always taking into account the needs of the clients. The home chef course lasts a little less than a year and takes place over a total of 21 full-day course days. Please ask the provider directly for the exact course dates using the contact form.

The aim of the Home Chef course is to be able to competently manage a home kitchen and improve the quality of life of care home residents. Graduates are able to understand the special needs of care home residents and take them into account when designing meals and services. In addition to specialist knowledge of nutrition, the various types of food and diets, they also have skills in conflict management, communication and managing staff.

The Home Chef qualification, which participants receive after completing the course and passing the competency tests, is not federally recognized, but concludes with a CURAVIA certificate from the Swiss Association of Homes and Institutions.

The training for prospective or existing home cooks (new designation cook in social institutions) covers the following topics:

  • Basics of professional kitchen work (e.g. work processes and organization in the kitchen, hygiene rules, safety and accident prevention, sustainability in the kitchen (food waste, regional products))
  • Nutrition & dietetics (e.g. nutrition in old age, for illnesses and for children)
  • Cooking techniques & menu planning (e.g. basic cooking techniques (steaming, roasting, boiling, baking), menu design taking into account budget and target group, seasonal and balanced menu planning)
  • Social skills & communication (e.g. dealing with residents, patients and staff, cooperation with specialist nursing and care staff)
  • Quality management & administration (e.g. goods purchasing, storage and control)

The continuing education, further training for home chefs is aimed exclusively at trained chefs with a Federal Diploma of Vocational Education and Training (VET Diploma) who already have several years of professional experience and want to acquire in-depth skills in the field of home cooking. However, participants are not required to have already worked as a chef in a nursing home or retirement home.
